Apple Cheddar Chicken Muffins

What you need:
– 2 cups unbleached all-purpose flour
– 2 1⁄2 tsp baking powder
– 1 tsp dried thyme
– 1 tsp salt
– 1⁄2 tsp ground black pepper
– 1 1⁄2–2 cups finely chopped cooked
chicken
– 1 cup shredded
cheddar cheese
– 2 green onions,
thinly sliced
– 1 cup peeled and finely
diced green apple
– 1 cup finely chopped baby spinach
– 2 large eggs
– 1 cup milk or unsweetened non-dairy milk
– 1⁄4 cup extra virgin olive oil
What you do:
1 Heat oven to 350°F (180°C). Spray or coat a 12-cup muffin pan with oil.
2 In a large bowl, whisk together flour, baking powder, thyme, salt, and pepper. Using a wooden spoon, stir in chicken, 3/4 cup cheddar, green onions, apple, and spinach.
3 In a small bowl, whisk together eggs, milk, and oil. Add to flour mixture and stir until evenly combined.
4 Divide batter evenly between the prepared muffin cups. Sprinkle each muffin with remaining cheese. Bake until golden and a cake tester inserted in the centre of a muffin comes out clean, 25 to 35 minutes. Transfer the pan to a wire rack and let cool for 5 minutes. Serve warm or at room temperature.
MAKES 12 MUFFINS
You can swap out the chicken for ham or smoked salmon, or you can omit the chicken and make these vegetarian muffins instead.
